In one of our wine cellar construction projects, we installed a glass home wine cellar in an open curved space. As one of the master builders in Vancouver, nothing could hinder us from building exceptional custom wine rooms.  

Before creating the design, we conducted a survey of the area to be utilized for the build-out project. We took measurements and created a design that would bring the owner’s space into a stunning wine display.  

We created 3-dimensional drawings showing the different elevations, racking dimensions, bottle configurations, door design, and placement of the door and wine cooling unit. We submitted our design proposal and waited for the approval of the client before starting the installation of the wine cellar.

The glass door was the perfect choice for a modern wine cellar like this. In our original draft, the glass enclosure had a frame. However, the owners did not like the thick frame, so we    

went for the frameless glass enclosure. The result was impressive! The frameless glass is 12 mm thick, done as Starphire low iron glass.  

The glass enclosure is visible because of the thin mohair low-pile weather stripping around the door. This mechanical feature creates an airtight seal, preventing air leakage through the gaps.

In one of our projects northeast of Vancouver, we created a one-of-kind wine cellar design consisting of a wine bar. Whoever sees the wine display area will be inspired to choose their favorite vintage from the wine racks and relax in the cozy space.  

The client and our team agreed that we would design the millwork, and he would have someone install the wine racks because of the location. 

After the homeowners contacted us to seek help with their project, we created a design proposal consisting of three design layouts. In the first layout, the design was simpler, intended for housing 650 bottles without a wine cooling system. The racking consisted of open vault bins, individual slots, diamond bins, and an archway with a small countertop.  

In the second design, the bottle capacity was only 400 bottles with additional cabinets. We retained the racking styles found in the first proposal. The only difference was the addition of the cigar humidor.  

In the third and last drawing, the design consisted of racking that could accommodate 340 bottles, including built-in refrigerated wine cabinets, a cigar humidor, and an arch opening with a stemware rack. This was the design chosen by the homeowners.   

The arch opening is the focal point of the wine cellar. The four-layer, eight-rack stemware is not only for storing wine glasses; it can also hold a few bottles and wine accouterments.

1. Large Format Wine Bottles are Rare

Some wineries only produce large format wine bottles for very special wines, and they only release them for very special occasions. There are wineries that only use large format wine bottles to showcase vintage wines, and release them only during the winery’s anniversary or for other occasions like a charitable event.

2. Wines in Large Format Bottles are Usually Higher in Quality

Wine ages through a chemical process called oxidation. In this process, the chemical components of wine are exposed to a small amount of oxygen. Take note that proper maturation happens with only a small amount of oxygen. Too much exposure to oxygen can ruin the flavor of wine.

In every wine bottle, there is a small amount of oxygen trapped in the empty space called an ullage. When the wine bottle is big, the amount of oxygen in it is relatively smaller than the volume of wine. This means that the oxidation of wine is slower. Slower oxidation often translates to better wine aging, and therefore, a higher quality of wine.

This also means that if you want to put away a wine bottle for a special occasion many years in the future, a large format wine bottle is a safe bet. Since oxidation is slower in large format wine bottles, they will reach their peak long after 750ml bottles have reached their prime.

3. Large Format Wine Bottles Are Highly Resistant to Fluctuations in Temperature

Fluctuating temperature is one of the enemies of wine. Wine needs to be stored in the ideal temperature, with minimal to no fluctuations. Large-format wine bottles contain a larger volume of wine. Larger volumes of liquid take longer to warm or cool, and therefore are more resistant to the damages caused by constant temperature fluctuations.

This does not mean, though, that you should settle for less than ideal custom wine cellar conditions. Your wines, whether in large format wine bottles or standard wine bottles, should be kept in a residential wine cellar that can provide the ideal conditions for proper wine storage.

While most of the commodities are consumed within 24 hours from the time of purchase, wines are often saved by the purchaser for long-term storage and aged. Wine is one of the things that get better with time when stored and aged properly, but it can also spoil and deteriorate rapidly if kept in inappropriate conditions. Proper storage and aging will enhance wine’s flavor, color and quality in general.

Light

wine storageWines, especially white wines should not be subjected to excessive amounts of light. They should not be stored under direct sunlight, and fluorescent lights with ultraviolet light in the wavelength of 325 to 450 nm.

Light may adversely react with the chemical compounds in wine and create potential wine faults or defects, which often leads to wine having a light-struck aroma (or gouts de lumiere – French for tastes of light).

Wine maintains its clarity and citrus aroma if stored in a dark room. This is why most wines are packed in colored glass and stored in wine cellars with a minimal amount of lighting.

Humidity

Humidity is another critical element of wine storage that must be considered, especially if wine cork closures are used. The efficacy of the wine cork depends upon the humidity level. While the optimal humidity range is not yet established and varies from one wine expert to the next, the often-cited ideal humidity level is between 60 and 70 percent.

The ideal humidity range will keep the cork expanded and in shape, providing a good seal to the wine bottle. When wine is stored lower than the ideal humidity level, cork will dry out, shrink or crack, allowing oxygen to enter the bottle and come in contact with the wine. Oxidation then occurs resulting in degradation of wine.

Additionally, when wine is subjected to a higher humidity level, mold may occur and while this will not affect the wine itself, the bottle and wine label will deteriorate.This provides yet another reason that storing your wines in a standard kitchen refrigerator is not advisable, since it is not designed to maintain the right humidity levels.
